It’s a day where love in the air, couples abound are twitterpated and singles across the country weep at the thought of being “alone.”  Well, no one is ever really alone on VDay.  This day is really what you make it.  In 2007, I had the best Valentine’s as a single woman because I surrounded myself with wonderful friends.  And this year, my boyfriend and I are celebrating in a unique fashion to avoid crowded restaurants and cliche chocolate hearts.  Although, if going out to eat is your thing and spoiling your significant other with chocolates is something you want to do, please do!! EASY GLUTEN-FREE RECIPE

Mango_EMMarshmallow-Mango Salad.  Super easy and super affordable.  Anyone can do this and it can be turned into a breakfast treat too!

Remember those marshmallows you used for the Christmas cocoa recipe?  Well, if you have some left over you can use the rest of them for this recipe.  This saves you even more money.  Really, all you have to do is buy some mango chunks.  If those aren’t available at your local grocery store, you can buy fresh mangos and cut them into cubes.  Super easy, simple and fast! I am back.  I took a break from blogging as I took a break from school.  My brain was fried and just like all of you, I very much wanted to enjoy my time off with family, friends, and my wonderful boyfriend.  So eczema talk aside…

GLUTEN-FREE RECIPE AND XMAS GIFT IDEA

EM_jarfinalDay 1 – Hot chocolate and marshmallows with a secret ingredient.. Well, it’s not so secret anymore!  This is a great “recipe” because it’s easy, delicious and doubles as a potential last-minute Christmas gift.

I got the Nestle hot cocoa powder, Jell-O vanilla pudding powder and marshmallows at Wal-Mart.  The Mason jars were $2 each at Joann’s, but I used 50% off coupons using the Joann’s app on my iPhone to bring my total

“MAMA, DOES SHE HAVE A BOO BOO?”

EM_sistersMy dear friend, Carly, has the two most beautiful, smart and charismatic daughters I have ever been lucky enough to meet.  She has an adorable 8-month old and a curious 3-year-old.  I went back to my hometown today and met up with Carly and her lovely family to say hello and catch-up on four months worth of time spent apart since I moved away.  I love both her daughters for warming up my heart in ways other children never have.  Her eldest daughter today pointed at a finger on my right hand and inquired about the yellow teddy bear band-aid  it was enveloped in.  She looked up at Carly with Continue reading

I’m sitting in front of the television set, lounging in my boyfriend’s maroon, black and white plaid fleece bottoms and a blue cotton crew neck tee, sipping on a hot chocolate with my raven hair in a messy bun.  A NBC special news report flashes on the TV screen about an elementary school shooting in Newtown, Connecticut where (horrifically and I’m so sad and shocked to say) the report claims 18 children are dead alongside eight adults. FIGHTING THE ITCH TO SCRATCH

Scratch_EMI can bind my hands at night with oven mitts and duct tape and I will still somehow manage to scratch that itch.  I’m not sure how I manage to puncture a whole through layers of fabric and not only scratch my arm, but scratch until it tears my skin and bleeds leaving residual red beneath my nails.  But that’s how it is at night.  In deep slumber, I really have no control whether I scratch.  It’s not until morning’s blinding sunlight breaks through the window and I wake only to see my skin torn apart.
